Eggs have tripled in price in the last few years. Now competitors are hoping to lure Americans away from their beloved breakfast food for substitutes that mimic the taste — but cost far less.

The freeze dryers are about the size of a mini fridge and a row of them hums away in a little building near Kern's chicken coop.

Why do eggs need substitution? Is it because someone’s over-arching dietary paradigm excludes animal products without consideration that eggs happen irrespective of human dietary concerns or actions?

I don’t care if eggs cost $20. Those “substitutes” taste like wet plaster. You can keep them.

I assume that includes egg ingredients in processed foods. Otherwise, no way does the 'average' person consume 5 eggs each and every week.

I don’t know anyone who eats 2 dozen eggs a month.

So weird to me. I'm lucky to eat a dozen in a year.
