There’s always a scattering of bankers, lawyers, wine-makers, and medical and property folk, with one local developer dining chez Stillwater three to four times a week.

The local Lenah wallaby makes regular appearances, as does southern rock lobster with rye blinis and macadamia cream, and local scallops and beef. If you’re hosting a group, commandeer the wine bar for drinks, then take over the private dining room or the long table in the atmospheric wine cellar. Reserve ahead to stay overnight in one of the rooms in the flour mill above the dining room – charm personified.
