Project Pollo started in September 2020 with a food truck outside Roadmap Brewing Co. downtown, where it served sandwiches, wraps and other items made with a plant-based protein. On “Shark Tank,” Bradbury asked for $2.5 million for 5 percent equity in his company, but the investors balked at the $50 million valuation and the rapid pace of the chain’s expansion.
