Chef patron Lionel Strub may be from Alsace originally, but he has fully embraced life in rural, stalking and shooting game, which is then prepared in his kitchen before putting it straight on the menu at the Clarendon.
He added: “I want to show the world that you can win awards for game but also that it’s a tremendous food and incredibly sustainable.
