A high-end restaurant utilizes water exclusively from Nordaq, a Swedish company focused on sustainable water solutions. The restaurant aims to minimize single-use plastic bottles in the hospitality industry.

A restaurant charging almost $500 per person for dinner only uses water from the Swedish company Nordaq. Executive Chef Martin Öfner said that all dishes and drinks at the restaurant, from stocks to juices in non-alcoholic beverage pairings, are made with Nordaq water. The water is purified and bottled on-site using local tap water and is also found in over 700 luxury hotels, casinos, and cruise ships.

Nordaq aims to decrease single-use water bottles in the hospitality industry, targeting both cheap plastic bottles commonly found in hotel rooms and glass-bottled European mineral water often served in higher-end restaurants, which can travel thousands of miles from source to consumption. Nordaq bottles are free from plastic labeling for easy washing and reuse, and they have wide mouths for cleaning in regular dishwashers. The Mandarin Oriental Singapore has used Nordaq's water system since 2023, with bottles available in the hotel's rooms, restaurants, spa, and gym. Hotel Manager Cindy Kong showed CNBC Travel their bottling facility, where 500 bottles are produced per hour. Nordaq is among several companies in the premium sustainable water market. Castalie water is present in over 700 hotels in France, while Purezza water is served in over 5,000 venues across 13 countries. The Indian hospitality company ITC Hotels created its own brand of 'zero-mile' water called SunyaAqua to reduce single-use plastic bottles in its 140 hotels
