You don’t have to constantly swear when hosting Kitchen Nightmares, but the Irish chef finds it helps.

. “But sometimes a sentence needs a ‘BLEEP’,” says chef Colin Fassnidge. “It accentuates it. And when you’re Irish, with an Irish accent – it’s different. People like it.” It’s true. Everything does sound better with an Irish accent. That’s science.

There were many, many meetings between Fassnidge and the producers, sorting through applicants. “Number one – do they need the help? And number two – can you work with them? There’s no point going in if you can’t,” he says. “You know how people go on these cookery shows to be famous?” Hmm, yes, apparently it’s a thing. “I’m not into that. This is about saving local businesses, saving livelihoods. People are, like, 300 grand in the hole, they’re not messing around.

So even though he gives it to these restaurateurs with both barrels, he genuinely wants to help. And although Fassnidge jokes about his reputation as – let’s say – a stern critic, the process wasn’t a joke to him.
