England's chefs and pub landlords are feeling a mix of nervousness and excitement about what the next few months holds.

The Mayflower pub in Rotherhite, London. Its traditional interiors bring in punters, but many might have to settle for outdoors drinking and eating.England's pubs and restaurants were allowed to reopen on July 4, after closing their doors for months during the COVID-19 lockdown.

"Half of our appeal is atmosphere," Redman said. "We try our best to do great food and wine but it's the spirit of staff that is most important." His family-run restaurant moved outdoors on July 4, cooking European cuisine on wooden ovens by the River Thames.

Chefs will adapt menus depending on the number of booked diners. And like other restaurants, Kombala will assign waiters to specific tables and let diners read menus on their smartphones by scanning a QR code. Barker believes being a "neighbourhood restaurant" will help him bring in customers after reopening. Local communities have been a lifeline for restaurants offering lockdown home deliveries — Barker believes restaurants relying on the tourist trade in London, or on business lunches, could face a tougher time. So will newer businesses that are cash-poor.

In North Yorkshire, Barker buys local meat, fish and vegetables for his restaurant — his reopening is not just a make-or-break moment for him, but for his suppliers too. "We can pass that onto health authorities if needs be," Smith said. "People could be cautious and uncomfortable around human interaction, and others who don't care. So it's up to us for people to make them feel safe".

In East Anglia, Turner, who owns historic pubs such as the 15th-century inn The Black Lion in Long Melford and 17th-century village pub The Three Blackbirds on the outskirts of Cambridge, is in no doubt that pubs can handle changes and be a safe place to relax in. "There should be a little bit more guidance for us. Are we going to have a 3 year deferral of rent payments or 5 years? It's all a mess; it's been left down to individuals to unravel what the government wants."
