At the start of 2020, I decided to take on a project: I'd cook my way, from start to finish, through "Since I started working through the vegetarian cookbook, I've cut my grocery spending in half — the recipes are cheaper, but I'm also shopping smarter to use the ingredients I have.

I own that 1992 version — 232 pages of easy-to-make recipes penned in warm, handwritten text, and littered with charming doodles drawn by Katzen herself. As time went on, the trend continued. Not only were the recipes themselves extremely wallet-friendly, most coming in under $25 for five or more meals, but I noticed them affecting the rest of my grocery budget as well.

But who would choose, after all, to tuck into a hot creamy soup on one of the warmest days in a Los Angeles summer? Or to eatvariations of the Waldorf salad right in a row, a project which I'm currently in the midst of inflicting upon my household?The takeaway from my vegetarian cookbook journey
