The 56-year-old started out as a waiter in the 1980s before working his way up to become F&B director.Francis said his wife and three children were supportive of his decision to quit and even encouraged him to venture into a small business."I knew failure was not an option. This was the one and only chance for me to realise my dream of managing my own food outlet.
