For years, many of the biggest names in the industry have made their fortunes on the back of their staff who’ve worked extraordinarily long hours for terrible pay. | OPINION

Many of these men are seriously rich with glittering media careers as the high-end food craze has turned them into celebrities from TV shows such as MasterChef.

Too often the exploited workers - many of whom are temporary migrants - get nothing or a fraction of what they are entitled to. At the same time, penalties need to be much higher while the regulator, the Fair Work Ombudsman, needs to ditch what is too often a collaborative regulatory approach.

This bloke charges $$$ for a degustation menu of pretentious teaspoon size portions to wannabes and then rips off his workers, what an arsehole.

What crock if big business where cheating banks you can bet business would be going to court.

It's borderline slavery, unless there were other benefits provided that were not monetary .If they accepted the job in return for working to build up the their own brand and employability on the reputation of the business , it was not a prison, unless references were withheld.

If workers would just join Unions in big numbers this sort of slavery would not exist.

I can't afford these fancy restaurant but love going to pubs and club where you get really nice food at a reasonable price and cheaper drinks and the staff seem to be very happy. These owners must feel entitled because they appear on t.v. and become big headed, and cheat.

Everyone working a salaried job does overtime and unpaid work to build a career. Get over it! How soft are we becoming as a nation. Whinghers

Yes. Disgraceful. Pleased for staff who will finally be paid their rightful earnings. How many other companies/wealthy owners are also ripping off their employees. Deregulation of the industry only benefits employers. Even when caught - mere slap on the wrist

Wage theft could be greatly reduced if the state Govt were to spend enough funds to deploy onsite inspectors with prosecutorial powers. The other issue of O/S students illegally working in excess of their visa permissable 20 hours, also needs to be checked.

Wage theft fines are cheaper than a loan from the bank. Listen up employers. Go ahead. I agree this is the latest budiness model.
