From dealing with the pandemic to facing wild surges in the price of supplies, even a popular and successful operation like St. Augustine's Catch 27 has had to pivot in order to keep its doors open.
Most restaurants make more money at dinner with higher-priced entrees and more drink sales. Lunch also added seven more shifts to cover, which has been difficult for many establishments. That led Hutson to decide that Catch 27 was going to be more of an upscale restaurant than before, especially as entree prices have moved into the mid-$30s in some cases.
A more obvious change is coming this year as Catch 27 renovates its patio and adds an outdoor bar that will offer drinks and appetizers. The restaurant will replace the ADA ramp with an ADA lift to make room for the bar.
