Jeremy Umansky and Allie La Valle, who met in culinary school, originally wanted to open a stand in the iconic West Side Market. Instead, they wound up with an entire deli in a restored Ohio City Firehouse.

Prior to World War II, food hadn’t been completely industrialized,” says Umansky. “It was handmade in small batches. We wanted the emulate that pre-World War II time period.
