Initially, Pakštaitė was the very essence of a reluctant entrepreneur: It took more than a year after starting her business before she even became comfortable with the idea of calling herself a founder.

What she hadn't anticipated was that she would have to convince the food industry of the business case for Mimica Touch."There's a feeling in the sector that if people waste more food, then supermarkets will sell more," she explains.
