“The new facility is a huge step, but it’s one we knew we needed to take,” Sellmer says. “We kept bringing on more staff but it wasn’t enough because as much as we increased production, we kept selling out. We needed a bigger space and wanted something where we could do our production and people could also pop in and see where we were making the chocolate.”
Sellmer almost immediately started winning international awards and started selling locally through pop-up events and a few retailers, but she wasn’t able to keep up with local demand, let alone interest from the international retailers that discovered her through the competition circuit. Sellmer had to decide if she wanted to keep Cochu small or if it was time to level up. She chose the latter.
