There is something about major sporting events that makes people hungry. One company in the Valley is ready to do its part and feed a lot of mouths Feb. 6 through Feb. 12: the week of the WM Phoenix Open and the Super Bowl.
Managing the volume of food – think 37,000 salmon filets, 28,000 flat iron steaks, 114,000 chicken wings for the week – and the crew to serve it, requires a very tight operation.
With the Super Bowl and its weeklong lead-up in the Valley during the WM Phoenix Open, equipment can be hard to come by. M Culinary sets up seven kitchens around TPC Scottsdale for the Phoenix Open, but with demand for rental equipment high in the Valley, Janison said the firm had to ship equipment in from out of state for that week in February.
