With Super Bowl LVII just around the corner,recently awarded a total of $50,000 to five small Hispanic-owned businesses in the Valley to help gear up for theAmong those businesses is Phoenix Coqui, a Puerto Rican restaurant located at 4041 N 15th Ave. in central Phoenix.
With the big game just days away, the restaurant is regularly packed with customers. To help facilitate demand, the restaurant will be open on game day from 11 a.m. to 4 p.m., he said. “I was raised here in Phoenix, my hometown, so I have a lot of Phoenix pride, and this is a way for us to share that culture, that experience, and that food with people here in my hometown,” Carbajal said.
“You know, for most people, it was a matter of survival, and for us as well. We felt like we were losing everything we had worked so hard for,” he said.“We reopened in June, during the hottest time of the year here,” Carbajal said. “But we were sold out that first day. That was a sign of the demand that we had been missing out on those months and that we really had a product that people were searching for.
