Farmer’s Fridge has sought to democratize salads by making them available to everyday people in the places they were already going. (via eaterchicago)

From the Millionaire to the Waldorf, salads have managed to cultivate a posh reputation. While there’s nothing inherently fancy or elite about a melange of vegetables, grains, cheeses, and protein, the concept has managed to break through as a status symbol, encapsulated in recent years by the vast proliferation of Sweetgreen outposts and ato expensive produce at so-called celebrity grocery store Erewhon.

Like the restaurant industry, the pandemic hurt Farmer’s Fridge and Saunders says the company lost 87 percent of its revenue in the first two weeks of COVID. They’ve since recovered with revenue returning to 85 percent of pre-pandemic levels in May due to aThis machine does more than just vend.Once a traveling salesman himself, Saunders says the company’s origin story traces back to many late nights he spent with few dining options beyond fast food.

Farmer’s Fridge has seen rapid growth since its founding in 2013, with locations at O’Hare International Airport, Shedd Aquarium, McCormick Place Convention Center, various hospitals, Los Angeles International Airport, and the Harvard University campus — as well as recent expansions into massive chains like Costco, Target, and airport concessionaire Hudson News.
