La Favorita, one of the new pizzas introduced this week at Ambrogio15 pizzeria in Pacific Beach. It’s the creation of Rome-born Enea Sintoni, Ambrogio15 Restaurant Group’s new executive chef. Back in 2016, a trio of buddies from Milan opened Ambrogio15, a pizzeria in Pacific Beach dedicated to serving authentic Milanese-style pizza.
Although the business has grown, Pizzigoni said his and Burrone’s devotion to doing things authentically hasnever wavered. When they opened Ambrogio by Acquerello in November 2022, they partnered with Silvio Salmoiraghi and Choi Cheolhyeok, who run the Michelin-starred modern Italian restaurant Acquerello just outside of Milan.
Recently, Sintoni reimagined the menu at the company’s flagship pizzeria in Pacific Beach. Eventually these new dishes will be added to the menus at other Ambrogio15 locations. The La Golosa, which means “The Gourmet” in Italian, was my favorite. It’s a thin-crust white pizza with big slices of Mortadella sausage, spicy truffle oil, Gorgonzola cheese, anchovies and mozzarella cheese. Talk about a flavor bomb. I’ve never had a pizza with both Gorgonzola and anchovies on it, but the combo packs a bold and tasty punch.
