Ellen Bennett, founder of the high-end apron and chef gear company, Hedley & Bennett, has successfully pivoted to exclusively making face masks in response to COVID-19. Here's how she did it.

While Hedley & Bennett’s pivot happened fast, it didn’t go without sacrifices. But what doesn’t kill an entrepreneur and her business, hopefully makes them stronger and more creative. Here are some of the top lessons Ellen has learned and put into her pivot process “non-playbook.”

“Overnight you would see businesses go from fine dining to something else completely,” she says. “Felix, one of the nicest Italian restaurants in Venice, became a pasta to go restaurant. It was so instantaneous. Instead of trying to continue to be a fine dining experience, they created a way to deliver fine dining to people’s homes. Delivering pasta sauce separate from the noodles, they even include a clove of garlic, a timepiece, and instructions. That is adapting.

“There are so many supply chain challenges right now, I can’t even tell you,” says Ellen. “People are very used to an instantaneous economy, and right now instantaneous has been thrown out the window along with the playbook. Instant doesn’t exist right now, so we have to be open with our audience, and tell them we have a two to three week turnaround time on shipping.
