As winter approaches and outdoor farmers markets wind down, many small businesses that rely on summer sales are now faced with the difficult task of planning for their off-season.

Co-owner Rachel Dunhoff, who owns Fox Fungi with her husband Kevin Fox, is pictured in the small store in the front portion of Fox Fungi Urban Mushroom Farm in Denver on Oct. 28, 2024. On Nov. 1, Dunhoff and her husband Kevin Fox, owners of Fox Fungi, will be launching a co-op out of their urban farm in South Denver. The couple will offer up their commercial space to local producers and artisans so they can continue to sell product through April.

Jars contain mycelium, at right, that will eventually be used to grow mushrooms at Fox Fungi Urban Mushroom Farm in Denver on Oct. 28, 2024. “We’ll be paying the rent on the space either way, so we figured, let’s open it up and see if we can help friends out,” said Rachel Dunhoff of Fox Fungi, which grows and sells a wide variety of cooking mushrooms, including enoki, lion’s mane and shiitake. “Around September, customers often start asking where they can find us and other producers in the off-season. Since we reduce production by 20-25% at the farm in winter, we have the space to share.

Rachel, for instance, picks up more hours at her second job as a flight attendant, while her husband drives for Amazon. Their market colleagues also work side hustles like Uber or DoorDash. Some also travel up and down the Front Range to a handful of winter markets like the Foothills Mall Winter Farmers Market in Fort Collins. All of the proceeds from sales will go back to the individual sellers, she added.
