How meat-eaters, not vegans, are driving the plant-based foods boom, according to industry experts

"The way that these new products deliver on taste and texture is just phenomenal," Grubb says. "The perception of the level of compromise that was necessary to be a vegetarian or a vegan has really, really diminished."

how meat-eaters? aren't they the target market in the first place? 🙄

Not exactly rocket science here. Vegans who don't eat meat all their lives or most of their lives, don't want a product that tastes like meat, even if it's not made of meat.

Of course the industry is going to be promoting itself.

Makes sense to me. There are more meat eaters than vegetarians and those meat eaters have more of an incentive to move to plant-based diets than vegetarians do to want a meat substitute.
