They should have had that 'very high quality expectations' mindset when making the remasters but it sounds like they farmed it out and we got inferior product as a result.

Remember that GTA Remastered Trilogy happened

They certainly have some excellent franchises under their belt, but attitudes like that lead to complacency and ultimately sub-par output.
