The food industry is increasingly being impacted by breakthroughs in biotechnology.

Thanks to a few breakthroughs in biotechnology like CRISPR gene editing and in vitro cell cultivation, the food and beverage industry is getting ever more sci-fi.

A McKinsey report predicted the cultivated meat sector alone could become a $25 billion global industry by 2030. However regulation has not caught up to the hype and cell cultivated foods cannot yet be sold in stores in the U.S. Food products that are a product of CRISPR gene editing are also in the early stages of development. While the global CRISPR market is projected to reach $4.75 billion by 2027, according to Polaris Market Research, the first CRISPR-edited produce went on the market last December and is only available in Japan. However, the technology promises to create fantastical cross breeds of fruits and vegetables, and even rice that can be grown in the ocean.

In the Bay Area, there are a number of companies that are blending the line between food manufacturer and biotech offering an array of tempting menu items that could change how we eat.
