“We like the opportunities that are there with this location just off I-90,” owner Fred Hoffmann said of the business he bought in 2021. “The area’s population is exploding in all directions.”Gifford’s opened in 2018 but abruptly closed less than two years later, two months before the COVID-19 pandemic shutdown.
With the traffic already there and “given our history with our brand, we can predict with sure accuracy that we will be filling a void opening in Elgin,” Hoffmann said. It took about 10 months to remodel the two-story space, which Hoffmann describes as clean, modern and rustic. The second floor, which should be complete in about six to eight weeks, is called Watermark Events. With multiple rooms, a private covered deck and a new elevator with decorative bubble wall, it will be able to accommodate events for up to 300 people, Hoffmann said.
They’re known for their thin crust and deep dish pizza and offer about 75 other dishes, including pasta, chicken, sandwiches, salads and even vegan, vegetarian, keto and gluten-free options, he said. They’ll offer carryout, delivery and catering.
